In a large pan, heat olive oil and add chopped onions. Allow to sweat for 5 mins.
Add chopped mushrooms and cook for a further few minutes.
Add mince and allow to brown.
Add spices, salt & pepper, stock, tomato puree and drained black beans.
Leave to cook on a medium heat for 15 mins.
Meanwhile make the guacamole. Mash avocado (I like mine quite chunky), add lime juice, chopped tomatoes, chopped coriander, chilli flakes, salt & pepper and mix well.
Cook rice according to instructions.
Grab yourself a bowl. Add a portion of rice, portion of beef and bean mix, chopped lettuce, spoonful of guac, handful of chips, handful of grated cheese, dollop of creme fraiche and drizzle with as little or as much chilli sauce as you like!
