Ingredients:
- 2 Chicken Breasts
- 1 Tbsp Crushed Garlic
- 1 Tbsp Butter
- 2 Pouches of The Gym Kitchen BBQ Lentils
- 1 Avocado, sliced
- 1 Handful Fresh Spinach
- 1 Red Pepper, sliced
- 1 Medium Sweet Potato, peeled and cut into chunks
- 2 Tbsp Chopped Parsley
- 1 Tbsp Olive Oil
- 1 Corn
- Tenderstem Broccoli
Method:
- Preheat oven to 200ā/180ā fan or air fryer to 200ā. Put sweet potato chunks into your roasting tin or air fryer basket, drizzle with oil and roast for 30-45 mins (oven) or 12-15 mins (air fryer) until cooked to your liking.
- Bring a saucepan to medium heat, add butter, chopped parsley and crushed garlic and cook for 30 seconds until fragrant. Add chicken breasts and season with salt and pepper, frying on both sides until cooked through.
- Meanwhile in a separate pot, boil corn and broccoli until done to your liking.
- Heat your BBQ lentils.
- Place lentils in your serving plate or bowl. Layer with spinach, peppers, broccoli, corn, chicken, avocado, and sweet potato chunks.
