Pancake Butter Pudding

Bring your desserts to a new level with the fluffiest pancake butter pudding ever! 🥞 Using our protein-packed maple pancakes (26g of protein per pack) for that extra oomph, this is a sweet treat that won’t weigh you down.

(Serves 8)

Ingredients:

  • 2 packs of The Gym Kitchen Maple Pancakes
  • 50g butter (for greasing & spreading on pancakes)
  • 140g Mixed Fruit
  • 500ml Milk
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Ground Nutmeg
  • 1/2 Tsp Ground Cinnamon
  • 50g Granulated Sugar
  • 3 Eggs

Method

  1. Preheat your oven to 170℃ (150℃ fan). Lightly grease an ovenproof baking dish with some butter.
  2. Cut your pancakes in half, and cover both sides with butter. Arrange a single layer in the bottom of the baking dish.
  3. Scatter a layer of mixed fruit over the pancakes, before adding your remaining pancake halves and another layer of mixed fruit.
  4. In a large bowl, add your milk, sugar, spices, vanilla extract and eggs. Whisk to combine.
  5. Pour the mixture all over your pancakes. Top with toasted nuts (optional) - we like flaked almonds and coconut flakes.
  6. Place your baking dish in the oven for 25-30 minutes, or until your mixture has been fully absorbed and your pancakes are golden brown.
